INGREDIENTS
For the cookies:
350g of flour and a little more for dusting.
1 teaspoon of baking soda.
1 teaspoon salt
2 teaspoon ground ginger
100g butter
175g brown sugar
1 beaten egg
4 tablespoons of cane molasses.
Wrapped candies flavored with different colored fruits.
For decoration:
A tube of white frosting (available at most supermarkets (optional)
A close bond.
PREPARATION
1. Preheat the oven to 180 degrees to start with this recipe that can be made perfectly with children.
2. For the cookie dough: mix the flour (previously sifted), baking soda, salt and ginger in a bowl.
3. Rub it with the butter until the mixture has a texture similar to breadcrumbs, then add the sugar.
4. In another bowl, beat the egg with the cane molasses and then add these ingredients to the flour mixture. Mix everything well until you get a soft dough, kneading it gently with your hands.
5. Crush the candies inside their wrappers with a rolling pin.
6. Roll out the dough on a floured surface until it is 0.5cm thick. Then cut them out using cookie cutters in different Christmas shapes. Place the cookies on oven trays with baking paper underneath.
7. Cut out shapes inside each cookie, making sure you leave a nice border. Fill the hole in the cookies with the crushed candies.
8. Make a hole in the top of the cookie with a straw so you can put the bow through. Put the cookies in the oven for 10 to 12 minutes until golden brown.
9. Take the cookies out of the oven. While they are hot, check that the holes are still there, if not, put the straw back in. Don't move the cookies from the tray until they have cooled because the caramel needs to harden. Once they are warm, carefully place the cookies on a rack so that they finish cooling evenly on all sides.
10. Decorate the cookies with the white icing, put the ribbons through the holes in the cookies so you can hang them from the Christmas tree.
