Christmas Recipes: Typical Christmas Sweet Potato Trouts 2026

Possibly you have already felt, at some point, that special sensation that occurs when we make and bake Christmas sweets. Maybe they can be motivated by good memories of the Christmases you spent in the kitchen with your mother, with your father or with your grandmother, or maybe it is just the warmth and nostalgia of cooking quietly at home while enjoying your favorite Christmas songs, while waiting for the rest of the family to savor what you are making.

And if we stick to the results and conclusions of some studies published in recent years, baking and making desserts to later share with others makes us tremendously happy, since it becomes, according to psychologists, a productive form of self-expression and communication.

However, whether because it makes us happier, because we enjoy cooking and we are passionate about cooking, or because we do it for pure and sole pleasure, it is an undeniable fact that making gingerbread men, traditional gingerbread cookies, or any other typically Christmas dessert becomes, in fact, one of the best parts of the holidays.

A good example is found in another traditional Christmas dessert, popular on this occasion in the Canary Islands: the wonderful and exquisite sweet potato struchas, a typical recipe that is common to cook especially during the Christmas season, although the reality is that it is also common to make it - and enjoy it - at some popular festivals the rest of the year.

They basically consist of individual sweet-tasting dumplings, filled with sweet potatoes and ground almonds, which are usually seasoned with matalauva, lemon zest and cinnamon (some recipes also include anise liqueur).

Although there are other ingredients that can be added to our preparation. For example, we can not use anise liqueur, especially if it is a preparation that we are going to share with the little ones in the house, and add raisins. You can also add sugar, although sweet potatoes are sweet by themselves, and the ideal is not to add more sugar to our Christmas preparation.

Ingredients

• 1 package of puff pastry wafers
• 500 g white sweet potato
• 250 g peeled and ground almonds
• 1 cup of anise liqueur (optional if we are making them for children)
• A handful of raisins
• ground cinnamon
• 1 tablespoon of matalauva
• lemon zest
• coarse salt
• Sunflower oil (for frying)

Preparation

Peel the sweet potatoes well, cut them into several small pieces (so they cook faster), put water in a saucepan on the heat and cook the sweet potatoes until they are tender. Add the matalauva. Halfway through cooking, add a little coarse salt.

While the sweet potato is cooking on the fire, it is time to grind the almonds well: set them aside.

Once they have been cooked well and are tender, drain the water, being careful not to burn yourself, and mash them well with the help of a fork. When they are well crushed, without any large pieces remaining, add the ground almonds, the raisins and the splash of anise liqueur.

Now it's time to fill our wafers. To do this, open one by one, and place a little of our filling in the center. Then carefully close the wafer, and with the help of a small fork, close them well by making some marks on the edge.

Put sunflower oil in a frying pan, and when it is very hot, fry the trout little by little, until golden brown on both sides. Drain them on absorbent paper towels to remove as much oil as possible.

Once fried, let them cool completely. To finish, if you wish, you can sprinkle a little icing sugar on top.
